An article in today’s UK newspaper, The Independent describes how farmed fish is now the UK’s largest export after chocolate and confectionery and, in particular, Scottish farmed salmon – where sales were up 27% in the first six months of 2014, with projected sales for the rest of the year expected to exceed those of 2013. The rapid growth in sales is due to more demand, and a growing appetite, in the Chinese market, followed by the US and European markets. The article also talks about how demand for wild smoked salmon has seen prices rise to more than £100 a kilo.
